The Laguna, a Luxury Collection Resort & Spa, Nusa Dua, Bali, is proud to present an extraordinary culinary experience featuring two renowned culinary teams, in a six-course dinner menu with selected beverages, at the newly designed Nusa Bagus Island. Chef Ryan Clift’s The Cave is renowned for its innovative dining experience, nestled within a natural subterranean cave, showcasing a mesmerizing blend of fine dining and breathtaking scenery. And now, the season is ripe for a collaboration dinner with Chef Tay Chan Yong, the head chef of The Cave at this brand new venue.
The newly transformed Nusa Bagus Island is a serene and exclusive venue, offering an intimate setting surrounded by enchanting water features and captivating views of the turquoise lagoon. The tranquil waterfall provides a soothing backdrop, making it an idyllic location for a romantic dinner with that special someone. This collaboration dinner promises to be a memorable occasion for diners, who will be the first to savour the innovative cuisine amidst the stunning scenery of Nusa Bagus Island.
Chef Tay Chan Yong and his culinary team from The Cave will work in tandem with The Laguna Bali’s F&B department to present an exceptional dining experience, featuring Chef Chan’s signature menu showcasing international cuisines with an Asian fusion twist. Chef Chan has had an illustrious career with Ritz-Carlton, culminating in his appointment as chef de partie, before moving on to serve as a sous chef for over five years at the renowned Tippling Club. These valuable experiences have helped Chef Chan emerge as a rising star on the island. “Discipline is the most important aspect to uphold standards and gain even greater achievements. With everything I have learned so far, I want to be of good use to the team and lead them to achieve all our goals,” says Chef Chan.
As you stroll through the beautiful natural surroundings to the waterfront at Nusa Bagus Island, Chef Chan and his team will be crafting an array of tantalizing dishes, including the Tuna taco, with a crispy tortilla wrapped around salmon ikura, and the coveted 48-hour Short rib – a prime quality short rib slow-cooked at a low temperature for 48 hours and served to perfection. Savor these culinary delights while basking in the gentle evening breeze and admiring the picturesque view of the clear lagoon. This promises to be an extraordinary culinary adventure that you will cherish forever.
