Brilliantly creative and experimental drinks created by some of the world’s hottest and most in-demand bars are on the menu in Clubhouse Bar’s quarterly pop-ups, kicking off with Thomas Girard from Singapore’s Operation Dagger, rated #30 in the hugely prestigious World’s 50 Best Bars. Girard’s impressive resume has skipped from London’s acclaimed 69 Colebrooke Row to Michelin-starred restaurants, such as Le Coq in Paris and Hexagone in Portugal. In common with subsequent pop-ups, after taking over the bar for one night only, his personalised signature cocktails can then be enjoyed by guests’ time and again throughout the quarter.
The finest portfolio of imported spirits from around the world are shaken and stirred into deep but always balanced twists on classic cocktails and signature serves, be they a post-dinner digestif, a much-needed pick-me-up or a nightcap – or three.
The Midnight Express(o) adds the warmth of cinnamon to the ever-popular espresso martini, while the Honol-Ulu is the perfect beachside creation, balancing refreshing citrus with smoky evening tones. Then the tequila-based Fresca Platina, an ode to Uluwatu’s iconic surf, blends vibrant lime and mint with seasalt water and cooling cucumber.
For when those cravings come, a late-night food menu then offers the ultimate in bites ranging from salty Rustic Fries to creamy Guacamole or the decadent but delicious Grilled Cheese Sandwich.

Conceptually, The Clubhouse Bar is an extension of The Clubhouse at Ulu, an elegant yet informal showcase of hospitality, art, colour and bespoke furniture. The overall subtly romantic aesthetic features unapologetic colour and texture, be that in alpine green walls, brass inlaid terrazzo flooring or rattan, teak, steel, mirror and marble all set together through matching tones.
The internal bar space seats eight, creating an exclusive ambience as guests watch the bar’s renowned mixologists work their magic. Behind them, the wall is lined with brass shelving that displays the finest selection of imported spirits. Guests can also enjoy their drinks al fresco on the outside terrace. Elegant palm lights cast in brass illuminate custom-made pastel-coloured upholstery which feature illustrations of the iconic monkeys of Uluwatu – an ode to the natural beauty of the Island.
